Living on a college meal plan has created a serious deficiency in my vegetable consumption. I feel like it’s not very easy to eat healthy unless you want to eat a salad every day. There’s no problem with that, but I’m definitely not the type of person who can eat a salad every day and feel fulfilled. Unless that salad is of the pasta variety. Then you’re talking my language! I’m a fan of roasted veggies as well as pairing vegetables with other delicious morsels (um, bacon? Prosciutto? Cheese? BREAD?). Okay, now I’m getting hungry. This post is a result of my extreme craving for some real veggies. Watch out, mom, over fall break we’re going on an all-vegetable diet!
