Risotto is the epitome of a winter meal. I know that people make light, summery risottos with lots of summer veggies, but I think that risotto is the perfect winter food. It’s warm, hearty and just plain delicious. Risotto can be customized in any way you want – with meats, vegetables, spices or anything you choose. I’ve had some pretty stellar veggie risotto, some killer chicken-based risotto and cheesy mushroom risotto. Is it possible to go wrong?
