I’ve been dying to try a crispy, olive oil-fried egg for weeks now. Now that it’s finally spring break (today is actually my birthday, too), I’m getting around to trying all of the different food things I’ve been craving. All I want to go when I go home is eat “real” food. Give me all of the vegetables, seafood and breakfast food. Or just anything that’s not deep fried. But I’m getting off topic here.
I love eggs. They’re the perfect companion to anything – put one on a steak. Put one on tater tots. Add an egg to your pizza. Or just eat it by itself, because eggs are perfect either way.
Crispy egg method at #chezfrank Put a small sauté pan on medium heat until its smoking hot. Add enough olive oil to cover the bottom of the pan (it should smoke the second it hits the pan) then immediately after add the eggs and season with sea salt, pepper, dried herbs and or spices. The eggs should almost explode in the hot oil, the white should soufflé around the yolk and the bottom should form a crispy crust hard enough that you can remove the egg from a normal pan with a fish spatula with just a little scraping and shimmying.
