Happy Friday. Last week I had the pleasure of coming across this article, from the Huffington Post. I’d seen totchos on Pinterest and food blogs, but I never felt the urge to make them. But this time, I did. These cheesy, salsa-y, guac-y, egg-y potatoes of goodness were well worth the calories. However, I bought my salsa and guacamole. It would have been so much better if I’d just made the toppings myself. Oh well, hindsight is 20/20.
